Zucchini with Bacon & Cheese |

This dish is very eye appealing as well as tasty. Ingredients:
2 medium zucchini, cut in half lengthwise |
2 medium tomatoes, chopped |
2 tablespoons cilantro, chopped |
1 jalapeno pepper, chopped |
2 cloves garlic, finely chopped |
1 1/2 cups gouda cheese or 1 1/2 cups cheddar cheese, grated |
4 strips bacon, cooked and crumbled |
4 tablespoons seasoned dry bread crumbs |
Directions:
1. Have a pot of water boiling. 2. Drop in the Zucchini and par boil 3-4 minutes. 3. Drain and remove seeds. 4. Combine the cheese, jalapeno, garlic, cilantro and tomatoes (you can add a bit of the pulp). 5. Stuff the zucchinis. 6. Broil until cheese etc is bubbly. 7. Sprinkle with bacon and crumbs and return to broil for 1 or 2 minutes. |
