These thin-pancake looking zucchini rounds are a good substitution for a veggie. I like them at coctail parties.
Ingredients:
1/3 cup biscuit mix
1/4 cup grated parmesan cheese
1/8 tsp pepper
2 slightly beaten eggs
2 cups shredded unpared zucchini (2 medium zucchini)
2 tbsp butter
Directions:
1. In mixing bowl, stir tog. biscuit mix, cheese and pepper.
2. Stir in beaten eggs just till mixture is moistened.
3. Fold in zucchini.
4. In a 10-inch skillet, melt butter over medium heat. Using 2 Tbsp mixture for each round, cook four rounds at a time about 2 to 3 minutes on each side, or till brown.
5. Keep warm while cooking remaining rounds.
6. Makes about 12 rounds.
