Zucchini Rice Pie

Veggie and starch all in one easy side. Very good use of zucchini and quite nice with a grilled burger or chicken main course.
Ingredients:
1 large onion, finely chopped
1 cup of sliced fresh mushrooms
1 medium zucchini, scrubbed chopped about one cup
1/2 tsp of dried basil
1/2 tsp of dried oregano
2 tbsp of butter
1 1/2 cups of cooked cooled rice
5 eggs
1/3 cup of milk
1/3 cup of grated parmesan cheese
Directions:
1. In a skillet cook onion, mushrooms, zucchini, basil and oregano in butter until the veggies are tender but not brown.
2. Stir in rice eggs, milk and 2 tbsp of cheese.
3. Turn into a well-greased 9 inch pie pan.
4. Sprinkle with remaining cheese.
5. Bake uncovered in 350 degree oven for 25 minutes.
6. Let stand for 10 minutes.
7. Great with a fresh tomato salsa topping, too.
