This pie taste just like apple pie . My Mom makes this every year and is enjoyed by the whole family. It can also be cooked ahead of time and frozen to use later. Defrost and serve.
Ingredients:
4 cups sliced zucchini
1 1/4 cups sugar
2 tablespoons flour
1 1/2 teaspoons cinnamon
1 1/2 teaspoons cream of tartar
2 tablespoons lemon juice
1 dash salt
1 dash nutmeg
Directions:
1. Peel and cut Zucchinni in length - remove seeds - cut into squares - cook until tender - drain - put into cold water until cool - drain - Mix with remaining ingredients - put into prepared pie crust - cover with top crust .
2. Bake at 400* - 40-50 minutes or until golden brown.
