Zucchini-Pear Soup

Main course or appetizer, which can be served hot or cold.
Ingredients:
1 1/2 tbs. olive oil
1 medium carrot, peeled and diced
1/2 medium onion, peeled and diced
1/2 medium potato, peeled and diced
1/2 tsp. fresh thyme
1 salt
1 pepper
2 medium zucchini, trimmed and diced
1 pear, peeled, cored & diced
2 c. chicken broth
Directions:
1. Put oil in large skillet over medium heat
2. When oil is hot, cook carrot, onion, potato & thyme with a healthy sprinkling of salt and pepper
3. Do not brown the vegetables
4. When onion is softened, about five minutes, add zucchini and continue to cook until everything is tender, 10 to 15 minutes
5. Add pear and cook until it has softened, about five minutes
6. Add liquid and bring to a boil
7. Taste and adjust seasoning
8. Cool mixture, then puree.
9. Serve cold or reheat and serve hot
10. Garnish with mint if desired.
