DELICIOUS pancakes with the flavor of cumin. They are only 45 cals... worth the easy preparation. Good alone or with low fat sour cream. YUMMMMMM. :)
Ingredients:
1 large zucchini, grated
1 medium onion, chopped
2 tbsp flour
1 egg white
1/4 tsp cumin
1/2 tsp salt
1/8 tsp pepper
1/8 tsp mustard powder
1/4 tsp garlic powder
Directions:
1. Mix all ingredients.
2. Spray a pan with non-stick cooking spray.
3. Spoon about 1/4 cup batter onto pan and spread as thin as possible.
4. Cook about 1-2 minutes over medium heat on each side, spraying after each pancake.
5. ENJOY!
