These slightly spicy, nutty muffins are our new favorites. If using frozen, shredded zucchini, make sure and squeeze well to remove excess water before adding to the batter.
Ingredients:
1 1/3 cups sugar
1/2 cup oil
2 teaspoons vanilla
2 eggs
2 cups flour
2 cups zucchini; shredded
1 cup walnuts; chopped
2 teaspoons cinnamon
1 1/2 teaspoons baking powder
1 teaspoon salt
Directions:
1. Heat oven to 375 degrees.
2. Grease bottoms of muffin cups.
3. Mix sugar, oil, vanilla and eggs in a large bowl.
4. Stir in remaining ingredients.
5. Divide batter into 12 regular or 24 mini muffin cups.
6. Bake for 18 to 22 minutes for regular muffins or 15 to 17 minutes for mini muffins or until golden brown.
