A chickpea free hummus that tastes great. You may also divide this recipe up and make different flavors-It makes a lot.
Ingredients:
24 ounce zucchini, chopped
1 cup tahini
1/3 cup lime juice, fresh
1/4 cup olive oil
2 garlic cloves
1 tsp salt
1/2 tsp cumin
Directions:
1. Put all ingredients in a vitamix and blend until smooth.
2. It would probably work in a regular blender because the consistency is thinner than regular hummus.
3. You may also need to adjust with more oil or lime juice to taste
