Quick casserole made with zucchini,rice,herbs and cheese
Ingredients:
1/3c uncooked long grain white rice
2/3c water
2tbs veg. oil
11/2lbs zucchini ,cubed
1c sliced green onions
2cloves garlic,minced,11/2tsp garlic salt
3/4tsp basil
1/2tsp sweet paprika
3/4tsp dried oregano
11/2c seeded,chopped tomatoes
2c shreaded sharp cheddar cheese,divided
Directions:
1. Combine the rice and water in a saucepanand bring to a boil. Reduce heat to low,cover,simmer20 mins,until rice is tender.
2. Preheat oven to 350.. Lightly greas shallow 11/2qt. casserole dish.
3. Heat oil in skillet over med heat and cook zucchini,green onions and garlic 5 mins or till tender. Season with garlic salt,basil,paprika and oregano. Mix in cooked rice,tomatoes,and 1c cheese. Continue to cook and stir till heated through. Transfer to the prepared casserole dish. Top with remaining cheese.
4. Bake,uncovered 20 mins,or till cheese is melted and bubbly.
