Zucchini Fritters

These are super easy to make and really good, especially served with tzatziki. They can also be made with potatoes or sweet potatoes which basically result in lattkes. Skip the salting prep if you do that, and switch or omit the cheese perhaps.
Ingredients:
1 lb small zucchini, coarsely grated
salt
8 oz feta, or half feta/half ricotta
6 green onions, chopped
3 tbsp dill
2 tbsp chopped mint
2 tbsp chopped flat leaf parsley
3 eggs, lightly beaten
1 1/4 cups all-purpose flour
black pepper
oil, for frying
Directions:
1. Put the grated zucchini in a colander, salt lightly, and toss to mix. Let this stand for about 30 minutes to draw out some of the moisture in the zucchini. Then squeeze the zucchini dry in some paper towels or kitchen towels and then put in a bowl
2. Add the cheese, onions, dill, mint, parsley, egg, flour, and salt and pepper to taste and stir until well mixed.
3. Add about 1/4 inch deep of oil to a frying pan and heat over medium-high heat.
4. Drop spoonfuls of batter into the oil, but not too many at a time, you don't want to crowd the pan.
5. Cook for about 2-3 minutes on each side, until nicely browned.
6. Transfer to paper towels to drain. Can be eaten hot or cold.
