A friend of mine gave me this recipe. It is so wonderful and no one but you will know it's zucchini. It tastes just like apple crisp.
Ingredients:
3 cups flour
2 cups sugar, divided
2 teaspoons cinnamon, divided
1 1/4 cups margarine
8 cups zucchini, peeled, chopped and seeded
2/3 cup lemon juice
1/2 teaspoon nutmeg
Directions:
1. Preheat oven to 375.
2. For crumb mix: Mix flour, 1 cup sugar, 1 tsp cinnamon and margarine in bowl.
3. Mix until crumbly.
4. Pat 1/2 of mix in bottom of 9x13 baking pan.
5. Bake 15 minutes.
6. For Filling: In pan on stove cook zucchini and lemon juice until tender.
7. Stir in 1 cup sugar, 1 tsp cinnamon and nutmeg.
8. Cook about 5 minutes more.
9. Spread filling over cooked crust.
10. Spread remaining crust over filling.
11. Bake 20-30 minutes until done.
