Zucchini Cream Style

A blend of zucchini, corn and tomatoes. Great side dish
Ingredients:
1 tablespoon vegetable oil
1/2 medium red onion, sliced
salt & pepper
1 lb zucchini, sliced
1 -2 teaspoon garlic powder, to taste
1 (14 1/2 ounce) can diced tomatoes
1 (15 1/4 ounce) can whole kernel corn, drained
1/2 cup heavy cream
Directions:
1. Heat oil in large saucepan over medium heat.
2. Stir in red onion, salt and pepper, and cook about 5 minutes.
3. Stir in zucchini and cook 3- 5 minutes.
4. Mix in garlic and tomatoes.
5. Continue cooking, stirrring occasionally, til it starts to boil.
6. Stir corn and cream into mixture.
7. Reduce heat to low, and continue cooking, stirring occasionally til thick and bubbly, 15- 2 minutes.
