Zucchini Cheese Casserole

This is an easy and delicious way to use zucchini. It's a very light casserole that makes a great side dish to chicken.
Ingredients:
3 medium zucchini, cleaned and sliced
1/2 cup chopped onion
2 fresh tomatoes, sliced
2 tablespoons olive oil
1 pound low-fat cottage cheese
1 teaspoon basil
1/2 teaspoon oregano
1/2 cup paremesan cheese
Directions:
1. Saute zucchini and chopped onion in oil. Drain well.
2. Whip cottage cheese, basil and oregano in a blender.
3. Place alternating layers of zucchini, cottage cheese and tomato slices in a 1-1/2-quart casserole dish.
4. Top with parmesan cheese.
5. Bake at 350°, uncovered, for 25-30 minutes.
6. Top with some sour cream if desired.
7. Less than 150 calories per serving!
