ZUCCHINI CHEESE CASSEROLE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Corbett Estate in Fate, Texas in 1986.
Ingredients:
3 cups zucchini thin sliced
2 cups grated mozzarella cheese
1 cup milk
3 beaten eggs
1/2 cup melted butter
1 teaspoon salt
1-1/2 cups cracker crumbs
Directions:
1. Alternate zucchini and cheese in layers in buttered 2 quart casserole.
2. Combine milk, eggs, butter and salt and pour over zucchini and cheese.
3. Put cracker crumbs on top then bake uncovered at 325 for 35 minutes.
