Ingredients:

Directions:

  1. Preheat oven to 400
  2. Cook pound of turkey burger or hamburger
  3. Turn off heat and stir in 1 cup of rice and diced onion
  4. Season with salt, pepper, and oregano
  5. Spread sliced zucchini (and yellow squash if you like) on the bottom of a buttered casserole dish.
  6. Top with burger mixture
  7. Then top with cottage cheese and cream of mushroom
  8. Lastly, put the cheddar cheese on top
  9. Bake uncovered for 50 minutes or until cheese is almost golden brown
