Ingredients:
11/2lbs.zucchini
1lg.onion.chopped fine
6t.butter,divided
1c.shreaded cheddar cheese
1taccent
1t.salt
1/8t.pepper
2eggs,beaten
11/2csoft breadcrumbs
Directions:
1. Scrub zucchini,cook in small amt of water till crisp tender or a little softer. Cool
2. Saute onion in 4T butter until golden.
3. Cut squash into cubes and add to onion.
4. Stir in cheese,accent,salt and pepper Cool
5. Mix vegetables lightly with beaten eggs. Spoon into buttered 1qt. baking dish
6. Melt remaining 2T. of butter,add to breadcrumbs and toss.
7. Sprinkle crumbs over top of zucchini mixture.
8. Bake 350 for 40 m until knife in center comes out clean..
