This recipe came from my friend Audra.
Ingredients:
1 cup oil
2 cups sugar
3 eggs
1 teaspoon salt
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon cinnamon
2 cups plain flour
2 1/2 cups grated zucchini
2 cups chopped nuts, divided
1/2 cup butter
8 ounces cream cheese
1 lb powdered sugar
1 teaspoon vanilla
Directions:
1. Mix oil, sugar, and three eggs.
2. In separate bowl mix salt, baking soda, baking powder.
3. Add dry mixture to the wet mixture and mix.
4. Add cinnamon, plain flour, grated zucchini, and 1 cup pecans.
5. Bake in a greased and floured 9x13-inch pan at 350 degrees for one hour.
6. For the frosting mix butter, cream cheese, vanilla and the remaining cup of nuts.
7. Spread on cooled cake.
