Ingredients:

  • 2 cups sugar
  • 3 eggs
  • 2 cups raw zucchini
  • 2 cups flour
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 3 tsp cinnamon
  • 3 tsp vanilla

Directions:

  1. Blend oil and sugar.
  2. Add eggs and zucchini.
  3. Sift dry ingredients together and add to the sugar mixture.
  4. Add nuts and vanilla.
  5. Bake in 2 loaf pans at 300 degrees for 1 hour.
