Reduced fat and high fiber
Ingredients:
2 cups raw zucchini, grated
1 cup unsweetened applesauce
3/4 cup egg substitute
3 teaspoons vanilla
2 cups sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
3 cups whole wheat flour
1/2 cup flax seed meal
1/2 cup natural bran
1/2 cup pecans, chopped
1/2 cup raisins
Directions:
1. in large bowl add ingredients as listed stirring after each addition.
2. pour into 2 greased or sprayed bread pans.
3. bake in a 325 degree oven for 60 minutes or until inserted toothpick comes out clean.
