Ingredients:
3 eggs
1 cup oil
2 cups brown sugar
2 cups zucchini, grated, raw, unpeeled
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 tablespoon vanilla
1 cup chopped nuts
Directions:
1. Beat 3 eggs. Add oil, brown sugar and zucchini. Mix well. Stir in flour, salt and baking soda. Fold in vanilla and nuts. Pour into 2 greased and floured loaf pans (9x5x3). Bake in 350* oven 1 hour. Remove from pans and cool on rack.
