Yummy spice bread recipe with healthy zucchini thrown in! Modified from the Betty Crocker cookbook recipe.
Ingredients:
1/3 cup shortening
1 cup granulated sugar
1/3 cup brown sugar
2 egg whites
1 egg
2 cups zucchini, shredded
1/3 cup water
1 cup all-purpose flour
2/3 cup whole wheat flour
1 teaspoon baking soda
3/4 teaspoon salt
1/4 teaspoon baking powder
1 teaspoon vanilla
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon nutmeg
1/4 teaspoon allspice
Directions:
1. Preheat oven to 350.
2. Grease bottom only of 9x5x3 loaf pan.
3. Mix shortening and sugar in a large bowl. Add eggs, zucchini, and water. Mix well. Then, blend in flours, baking soda, salt, baking powder, vanilla and spices.
4. Pour batter into prepared pan.
5. Bake about 45-60 minutes, or until toothpick comes out clean.
6. Cool slightly, then remove from pans.
