Ingredients:
3 eggs
2 cups sugar
1 cup oil
1 teaspoon vanilla
3 teaspoons cinnamon
1 teaspoon salt
1 teaspoon baking soda
1/4 teaspoon baking powder
2 cups grated zucchini
3 cups sifted all-purpose flour
1 cup chopped nuts
Directions:
1. Beat together eggs until foamy
2. Add sugar,oil, and vanilla mix well.
3. Add Zucchini beat again.
4. Add flour and nuts mix well.
5. Pour into 2 greased and floured loaf pans.
6. Bake 350 F for 1 hour or until done.
7. Remove from pans and let cool.
