Ingredients:
3 eggs
2 cups sugar
1 cup oil
1 teaspoon salt
1 cup chopped nuts
2 cups grated zucchini
3 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 1/2 teaspoons cinnamon
2 teaspoons vanilla
Directions:
1. Beat eggs and sugar together - slowly add oil and vanilla
2. Add all dry ingredients sifted together.
3. Fold in Zucchini and nuts.
4. Grease 2 loaf pans, dust with sugar or flour. Bake 1 hr at 350.
