Yummy yummy bars which a former co-worker used to bring in years ago. Probably my first experience eating zucchini. And I especially like the frosting, which is NOT made with cream cheese! Good eating.
Ingredients:
3/4 cup butter, softened
1/2 cup packed brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1 1/2 teaspoons baking powder
2 cups shredded zucchini
1 cup shredded coconut
3/4 cup chopped walnuts
1 cup confectioners' sugar
2 1/2 tablespoons milk
1 1/2 tablespoons melted butter
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
Directions:
1. Preheat oven to 350 degrees.
2. Cream butter until light and fluffy and beat in sugars.
3. Add eggs one at a time, and then mix in vanilla.
4. Stir in flour and baking powder.
5. Mix in zucchini, coconut and nuts.
6. Spread evenly in a greased 15 x 10 x 1 baking pan.
7. Bake 30-35 minutes.
8. While bars are baking mix together the frosting ingredients.
9. When bars are done, let cool for 10 minutes, and then spread with frosting while still warm.
10. Cut into squares.
