A wonderfully moist, good for you snack. Great with a hot cup of tea. Serve with Neufchatel or regular cream cheese , if desired. Absolutely delicious!
Ingredients:
1 medium zucchini, shredded (1 1/2 cups)
1/4 c sugar
1/4 c oil
3 egg whites or 1/2 c cholesterol free egg product
1 1/2 c all purpose flour
1 tsp cinnamon
2 tsp vanilla
3/4 tsp baking soda
1/2 tsp salt
1/4 tsp baking powder
1/4 tsp cloves
1/2 c finely chopped dried apricots
Directions:
1. 350 oven spray and flour bread pan
2. Mix zucchini, sugar, oil and egg whites in large bowl
3. Stir in remaing ingredients except apricots. Stir in apricots
4. Bake about an hour to an hour and 10 minutes or until
5. A toothpick inserted in center comes out clean.
6. Cool 10 minutes: remove from pan.
7. Cool completely on wire rack before slicing.
8. Serve with cream cheese
9. 1 loaf (24 slices)
10. 80 calories per slice
