Zucchini And Squash Casserole

Easy casserole. Great for picnics
Ingredients:
6 small zucchini (slice into 1/2 inch pieces)
6 small yellow squash (slice into 1/2 inch pieces)
1 medium onion, chopped
1 medium carrot, grated
1 pint sour cream
1 can cream of mushroom or cream of chicken soup
8 oz. pkg. peppridge farm stuffing mix
1/2 stick butter
garlic powder, salt and pepper to your taste
Directions:
1. Boil squash, zucchini, and onion until tender. Drain well. Put in a medium size bowl.
2. Add carrots.
3. Mix together sour cream and soup. Add to drained squash. Mix well.
4. Melt butter and mix into dry stuffing.
5. Put 1/4 of stuffing on bottom of casserole dish, pour squash on top and sprinkle with the rest of stuffing.
6. Bake in preheated 350 degree oven for 20-25 minutes.
7. Can prepare ahead and keep in the frig until ready to bake.
