Zoey's Healthier Fluffy Chocolate Chip Cookies

This is a healthy adaptation of my favorite chocolate chip cookie recipe so that I could eat a dozen or so of these while I was pregnant without really debilitating guilt... just normal guilt. It didn't really work out the way I wanted to (I gained 80 lbs!) but at least my monumental weight gain slowed down... Aye Yaye Yaye, Nothing made me hungrier than being pregnant! :0 These are named after my Zoey.
Ingredients:
2 1/4 cups flour (use a healthier mix if you like! i used wheat, oat and regular)
1 teaspoon baking soda
3/4 cup splenda brown sugar substitute
1/4 cup splenda sugar substitute
1 cup butter
3 1/2 ounces instant pudding (any flavor you like, i use vanilla)
1 teaspoon vanilla
1 teaspoon almond extract
1 pinch salt
2 eggs
2 cups chocolate chips (or whatever you like, have fun!)
Directions:
1. Preheat to 350 degrees.
2. Combine 2.25 cups of flour, 1 tsp of baking soda, and good pinch of kosher salt in a bowl. Set aside.
3. Beat .75 cups of brown sugar, .25 cups of regular sugar, 1 cup of butter, 1 package of instant pudding, a teaspoon of vanilla, and 1/8 teaspoon of almond extract in a bowl.
4. Add 2 beaten eggs.
5. Beat in the bowl of flour, baking soda, and salt you left behind.
6. Add 2 cups of chips. If you're feeling nuts add another liberal pinch of kosher salt.
7. Bake 10-12 minutes, depending on your preference.
