Zoes Mexican Lasagna-with-a-zee

Our neighbors were having something like this for tea one night when mum popped in, She was envious and told me i should make it too. Just made up, off the top of the head. I used rectangular lavash tortilla things, (because thats what ma brought back from the shoppe) but you could use round tortillas, and bake in a round cake tin. Read more . Measurements are not specific, so just make it to your particular taste. Yum.
Ingredients:
1 brown onion, chopped
1 clove garlic, minced
1 red capsicum (bell pepper), diced
500 g beef mince (ground beef)
1 packet taco seasoning.
(or just make up your own; 1 tbsp cumin, 1 tbsp paprika, 2 tsp chilli powder, 1 tsp cinnamon, 2 tsp oregano) you know, to taste....
400g can four bean mix
2 cans chopped tomatoes
140g tomato paste
about 4 large tortillas (i used rectangular 'lavash' bread...whatever)
1 avocado diced or mashed (or guacamole would work too)
about 1/2 cup thick yoghurt (or you could use sour cream, but we never have that in our fridge..)
grated cheddar cheese
Directions:
1. Cook onion and garlic some oil in a saucepan until soft. Add capsicum and beef and cook until beef is brown. Remove from heat and drain all the juice and fat.
2. Add in the taco seasoning and/or spices, drained and rinsed beans, tomatoes and tomato paste. Bring to the boil and simmer for like, al least 10 minutes, uncovered.
3. Preheat oven to 180C (thats 350F)
4. While its simmering, you will notice that a 'liquid' will form on the top of the mince. Make a 'well' in the middle of your mince mixture. The juice should run into the well, so you've got like a pool of it in the middle of the mince. Scoop out about 1/2 cup of the liquid and set aside.
5. Spread a little of the -lets call it mince juice (mmmm) over the bottom of a large baking dish. (one that fits your tortillas, if you've got round tortillas, use a round cake tin)
6. Place one tortilla on the bottom of the dish. Top with mince. Sprinkle on some cheese.
7. Add another tortilla. Spread with the avocado (or guacamole if you're into that..i'm not). Top with mince.
8. Add another tortilla. Spread with yoghurt / sour cream. Top with mince.
9. Add the final tortilla. Pour over the remaining mmmmince juice and top with however much grated cheese you like.
10. Bake for 20-25 minutes, until the top cheese is to your liking.
11. Serve with salad.
12. ***I did have quite a bit of leftover mince mixture, but you know, if your dish is big enough you can add as many layers as you like. Or make 2 smaller lasagnas. Or the mince on its own can be eaten as chili or in tacos. Freeze it, then you don't have to cook one night!***
