Ok so its not ACTUAL key lime pie cause its not made with KEY LIMES, i know that...but im in australia and just dont have access to those kinds of resourses ok? It'd probably be better with the propper limes, ive read they have a more tatr flavour? Read more ? eh, Jeremy loved it anyway. Thought it was better than the midnight apple pie even...
Ingredients:
140g graham crackers (we dont have them in aus. either so i used arnotts shreaded wheat biscuits)
60g butter, melted
400g can condensed milk (i used skim)
2 tsp grated lime rind
1/3 cup lime juice
3 eggs
4 tbsp white sugar
Directions:
1. Preheat your oven to 170 Celcius, line a pie pan.
2. Process the grahams in a food processor till they are crumbs. Stir in the melted butter and press into the pie pan.
3. Bake for 10 minutes or so and allow to cool.
4. Combine the condensed milk, lime rind and juice, one whole egg and 2 egg yolks. (Save the whites for meringue)
5. Pour into the pie crust, cover and chill for one hour.
6. Preheat your oven to 175 Celcius.
7. FOR THE MERINGUE, beat the eggwhites in a glass bowl with electric beaters untill they're foamy. Add in the sugar one tablespoon at a time, beating well after each one.
8. Beat till it forms soft peaks.
9. Spread over the pie and bake for 15 minutes.
10. Allow to cool then put it in the fridge till you wanna eat it.
