This is a great replacement for a potato salad. There's no mayo so you don't have to worry about putting this out for a picnic. You can modify the hot factor with more or fewer jalapenos!
Ingredients:
1 cup uncooked white or brown rice
2 cups water
1 can black beans, rinsed
1 can pinto beans, rinsed
2 stalks celery, chopped
1 small red onion, chopped
1 medium red pepper, chopped
1 (2 or 3 or 4 depending on your taste) jalapeno minced
1/4 cup cilantro, chopped
1 cup frozen corn
1 cup italian salad dressing (i use fat-free)
Directions:
1. Cook the rice in your 2 cups of water and set aside to cool.
2. Mix together well rice, beans, celery, onion, red pepper, jalapeno, cilantro, corn.
3. Add Italian dressing and mix well.
4. Refrigerate overnight and serve cold.
