Zesty Orange Chicken With Orange Infused Basmati R...

This comes together so quickly, but the flavors are fantastic. Your family or guests will think you slaved over this, but don't tell them how easy it was.
Ingredients:
orange basmati rice
1 cup basmati rice or other long grain rice
2 cups cold water
2 tsp chicken base (i use better than bouillon,or 2 tsp chicken bouillon granules)
1 tbs finely shredded orange zest
1/4 tsp salt
chicken
4 medium boneless skinless chicken breast halves, filleted
2 tbs butter or margarine
1 tbs olive oil
1/4 cup chopped green onions
2 tsp finely shredded orange zest
1 cup orange juice
1 tbs brown sugar
1/4 tsp cinnamon
1/4 tsp cumin
1/8 tsp cayenne pepper
2 tbs raisins, coarsely chopped
Directions:
1. In a saucepan, bring the water to a boil over high heat.
2. Add the rice, chicken base or bouillon, 1 Tbsp orange peel and the 1/4 tsp salt.
3. Return to boil, cover, reduce heat to low, and cook for 15 minutes.
4. Keep covered, and set aside.
5. Sprinkle the chicken with salt and pepper.
6. In a large skillet over med heat, melt the butter and add the oil.
7. Cook the chicken for 3-5 minutes on each side, remove from pan.
8. Add the green onions to the pan and cook over low heat for 1 minute, stirring frequently.
9. Add the remaining ingredients to the pan.
10. Turn heat back up to medium high and add the chicken back to the pan.
11. Cook for 5 more minutes, stirring frequently.
12. Fluff the rice.
13. Divide rice among plates, and top with the chicken.
14. Spoon sauce over chicken and serve.
