This foccacia is seasoned with zatar. Zatar (also spelled satar, zahatar, za'atar or zatr) is an aromatic spice mixture used in the Middle East, especially Turkey, Jordan and North Africa. Like many spice mixtures, there are many variations, but all contain (toasted) white sesame seeds, ground sumac, thyme and salt. Read more . It is used on meats and vegetables, and is also mixed with olive oil to make a spread or dip. Zatar has a unique zesty/herby flavor. Zatar can usually be found in Middle Eastern groceries.
Ingredients:
1 teasp. sugar
1/4 cup warm water
1 1/4 oz (1 env) of dry yeast
3 1/4 cups flour
1 tesasp salt
2 teasp olive oil
1 cup water
topping: 1 t olive oil, 1 teasp zatar, 1/4 teasp sea salt
Directions:
1. Stir sugar and warm water together in a small bowl.
2. Sprinkle yeast over top. Let stand for 10 minutes.
3. Stir to dissolve yeast.
4. Measure flour and salt together into a large bowl. Stir. Make a well in the center.
5. Add yeast mixture to the well. Stir with spoon until mixed.
6. Make a well once more and add the olive oil and water to the well.
7. Stir. Turn out onto a floured surface. Knead for 9-10 minutes until smooth and elastic.
8. Place in a greased bowl, turning once to coat with grease.
9. cover with a clean towel. Let stand in the oven with light on and the door closed for 1 to 1 1/2 hours until doubled in bulk.
10. Punch down. Place on a greased baking sheet.
11. Press or roll out to a 12-inch circle.
12. Makes 1 round flat bread.
13. Topping-Make dents with fingers in the surface of the dough. Drizzle with olive oil. Sprinkle with Zatar and sea salt. Let stand uncovered for 30 minutes. Bake at 400F for about 25 minutes. Serve warm or cold, cut into wedges.
