This certainly is a zesty recipe, created in a truly zany fashion - throw a lot of ingredients together & cross my fingers. I grabbed all my North African/Middle Eastern spices and used many of them to create this spice mix. The sugar aids in caramelization. It will work with anything; I tried it on chicken (enough for 8 large breasts) because I don't like seafood. Created for The Mixing Pot challenge in the Fish & Seafood Forum. Enjoy.
Ingredients:
1 tablespoon sumac
1 tablespoon dried mint
1/2 tablespoon ground cinnamon
1/2 tablespoon sugar
1/2 tablespoon salt
1 teaspoon ground black pepper
1 teaspoon ground cumin
1/2 teaspoon cayenne
1/2 teaspoon ground coriander
1/4 teaspoon ground cloves
1 big pinch saffron, crumbled
Directions:
1. Combine all ingredients.
2. Sprinkle over scallops, shrimp, pork, chicken, tofu, fish, steaks - anything!
3. Cook as your heart desires. I recommend cast iron skillet or grill.
