Vegetarians can still enjoy a mock gyro. These are incredible and I simply love them! I hope you will too! I created this recipe myself after seeing my sister adore her lamb gyro at a nearby Greek restaurant... Read more ...I had to try them myself of course veget arian style. :-)
Ingredients:
1/2 cup chopped cucumber
1/2 cup nonfat sour cream
1/4 cup plain nonfat yogurt
1 teaspoon olive oil
1 pound vegetarian ground crumbles (examples: morning star farms, boca)
1 teaspoon dried whole oregano
1/2 teaspoon dried whole thyme
1/4 teaspoon salt
1 tablespoon lemon juice
1 (6-inch) pita bread rounds, cut in half crosswise
1 cup thinly sliced red onion
1/2 cup green pepper, thinly sliced
1 1/2 cups shredded lettuce
Directions:
1. Combine first 3 ingredients in a small bowl; mix well.
2. Cover and chill for 30 minutes.
3. Heat olive oil in a large non-stick skillet over medium heat until hot.
4. Add vegetarian crumbles, oregano, thyme, and salt; cook until browned.
5. Transfer mixture to a plate lined with heavy paper towels and pat out excess oil.
6. Transfer to a bowl.
7. Add lemon juice, and stir well.
8. Spoon vegetable crumble mixture evenly into pita halves.
9. Top evenly with onion, peppers, and lettuce.
10. Serve with sour cream mixture.
