To me there is nothing better than fresh tomato and basil over some good toasted bread. The perfect summer side dish!
Ingredients:
1 large tomato seeded and diced small
1 large clove of garlic finely minced (see variation for less garlic flavor)
10-20 basil leaves (depending on their size) chopped chiffonade style
1-2 tbsp parmesan depending on your liking
olive oil
6 slices of french bread or baguette
optional: balsamic vinegar
Directions:
1. Mix first four ingredients. 2. Drizzle in the oil until everything is juicy-about 1/8 c. 3. Let sit on counter while oven preheats to 400°. 4. Toast bread in oven 5-10 minutes until just crispy and lightly browned. 5. Top bread with bruschetta mixture. 6. IF DESIRED you can drizzle a little vinegar over the bruschetta for a little sweet/tangy flavor. 7. ALSO if you dont like a lot of garlic you can rub the bread with the garlic clove after it is toasted instead of adding to the tomato mixture.
