Yummy Mex Skillet Dinner

This is so yummy! We've been trying to stay away from the standard box meals so I came up with my own version of a hamburger helper type meal, expcet so much better, not to mention cheaper! We use ground turkey but you're more then welcome to sub for ground beef. It's all in taste. Also the measurments are guest as I usually just eyeball it. I'll also serve with a sprinkle of cayenne. UPDATED!
Ingredients:
1 lb ground turkey
1/2 onion, chopped (optional or you can use onion powder for those that don't like the onion pieces, like dh!)
2 -3 cups cooked egg noodles (or any noodle you prefer)
1 (10 3/4 ounce) can cheese soup (the fiesta blend would also be great!)
1 (10 3/4 ounce) can chicken broth or 1 (10 3/4 ounce) can water
1 1/2 tablespoons taco seasoning (to taste)
salt and pepper, to taste
sour cream (optional)
salsa (optional)
Directions:
1. In a pot cook the noodles according to package, or you can throw them with the meat and sauce if you'd like.
2. In a large skillet, brown meat and onion til done; strain and return to skillet.
3. Add broth, chicken broth, taco seasoning and noodles. Cook on medium low heat for 10 minutes for flavors to incorporate. If sauce seems to thick, add a little more broth or water.
4. Season with salt and pepper.
5. Serve with a dallop of sour cream. Enjoy!
6. *OPTIONS* For a twist, throw in some frozen corn and black beans. Yum!
