Yummy Chinese Chicken Salad

This really flavorful salad not only looks good but tastes good too! I first had it at a pot luck at work approx. 10 years ago. In a hurry? Knock off the cook time by purchasing a rotisserie chicken at the store
Ingredients:
dressing
6 tbsp. rice vinegar
1 packet seasoning mix from ramen noodles (see below)
1/3 cup sugar
1 tsp. salt
1 tsp. pepper
2/3 cup light canola oil or olive oil
salad
1 large head napa cabbage
3-4 cooked chicken breast halves
1 cup or 1 package frozen peas, thawed
1 (5 oz.) package slivered almonds
sesame seeds
1/2 cup thinly sliced radishes
1/2 cup thinly sliced green onions
1/2 to 1 bunch of chopped cilantro
couple of shaved carrots
2 packages sapporo brand ramen noodles (original flavor- look
in international or specialty food section. if you can’t find sapporo
brand, use any brand that says “original.”)
Directions:
1. Boil or poach the chicken breasts and shred into bite-size pieces. Thinly slice cabbage.
2. Add chicken, peas, radishes, carrots green onions and almonds. Toss.
3. When ready to serve, break up both packages of uncooked noodles into small pieces and add to salad.
4. No more than 1/2 hour before serving, add salad dressing and sesame seeds to taste.
5. Dressing and chicken can be made one day ahead of time.
6. Makes 6 large servings.
