I've had this recipe for nearly 15 years. I thought I lost it today (!) therefore publishing on so I'll have it forever. I love it because it's moist and not dry like other recipes. It calls for margarine but I use softened butter instead. And I always seem to bake it for longer than the recipe recommends.
Ingredients:
1 cup sugar
1/3 cup margarine
2 eggs
1 1/2 cups ripe bananas
1/3 cup water
1 2/3 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
chopped walnuts
Directions:
1. Cream together sugar and margarine. Add eggs, one at a time. Add mashed bananas and water to creamed mixture. In a separate bowl, combine flour, baking soda, salt, baking powder. Add gradually to the creamed mixture. Add chopped walnuts and reserve some sprinkle on the top of the bread. Grease loaf pan, 350 degrees for 55-60 min or until toothpick comes out clean. Makes one loaf.
