From the Diamond Shamrock Employee Cookbook, a really tasty potato recipe.
Ingredients:
2 lbs yukon gold potatoes
4 tablespoons butter, melted
1 cup milk, heated
1 bunch scallion, diced
salt and pepper
Directions:
1. Wash potatoes and place in pot with enough water to cover. Bring to a boil and cook until tender when pierced with a fork, 40-50 minutes.
2. Drain and place in a large mixing bowl. Add milk, butter, scallions and mash, blending well. Season with salt and pepper to taste.
3. Serve piping hot.
