This is terrific! And no one will even know your secret! You may use low-fat mayonnaise rather the fat-free, but honestly, you won't have to, it's that good! Same goes with the cottage cheese, you can go the Fat free route. Your choices. I do the fat-free route. You can serve in some lettuce cups, crackers, or on top of a small salad. Note: this is only a recipe for a single serving. You can double or triple it, it keeps well.
Ingredients:
1 egg, hard-boiled, peeled
3 tablespoons low fat cottage cheese
1 teaspoon parsley, chopped
1/2 teaspoon curry powder
1 dash salt (to taste)
1 dash pepper (to taste)
1 tablespoon lower fat mayonnaise
Directions:
1. Chop the egg.
2. Place all of the ingredients in a small bow.
3. Combine all together.
4. Keep in refrigerator.
