You Can't Beat 'em Healthy Blender Muffins

No sugar, no honey- these muffins are naturally sweetened with fruit and loaded with delicious nuts and seeds. You can't beat these for healthiness or for flavor, considering how good they are for you. Whip out your blender and you'll have these muffins ready in a flash- can't beat that, either.
Ingredients:
1 apple, cored (peel if you want)
9 prunes
9 dates
2 small bananas
3 eggs
1/4 cup butter, softened
1 teaspoon vanilla
1 teaspoon salt
1/2 cup orange juice
1 1/2 cups whole wheat flour
1/2 cup sunflower seeds
1 cup rolled oats
1/2 cup chopped walnuts
1/3 cup powdered milk
2 teaspoons baking powder
1 teaspoon baking soda
1/2 cup coconut
Directions:
1. Preheat oven to 350°F.
2. Blend the apple, prunes and dates until pureed.
3. Add the bananas, eggs, butter, vanilla, salt and juice and blend again.
4. Mix together the remaining ingredients in a large bowl.
5. Add the blender mixture to the ingredients in the bowl and mix well.
6. Pour into greased or lined muffin tins and bake for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
