I'm not sure whare i got this from, but it's so good! Apple rings are placed over the pork chops, and the batter is poured over and baked. I prefer to season this more than the recipe requires, and add cinnamon on top of the apple rings.
Ingredients:
1 large granny smith apple
4 tablespoons olive oil
4 pork loin chops (i use boneless)
1 cup milk
3 eggs
1 cup flour
2 tablespoons melted butter
1/2 teaspoon salt
Directions:
1. Peel and slice apple into 4 thick rings. Melt the oil in a small pan; brown them for 1 minute on each side. (I sprinke w/ cinnamon) Put an apple ring on each pork chop (season as you prefer).Place into a greased 9x13 pan. Whisk the eggs, milk, butter, and flour. Pour batter over the chops and bake about 35 minutes at 450, or until the batter is browned and puffy. Serve immediately.
2. Note: Use only thick chops; thin ones will become dry.
