Easy vegetarian tofu soup
Ingredients:
4 cups of vegetable broth
60 grams rice noodles
300 grams of silken tofu
1 cup of spinach leaves
1/2 sliced onion
1 cup of mushrooms
1 cup broccoli
1 tsp fresh ginger
1 pepper
Directions:
1. Heat the broth in a saucepan.
2. Add the onion, mushrooms and broccoli and simmer for 5 mins.
3. Add the noodles and simmer til tender.
4. Stir in the spinach, ginger and pepper and cook til wilted.
5. Serve in a deep bowl. Can be garnished with chilli flakes, mint or coriander, dried shallots, and a squeeze of lemon.
