My yiayia (grandmother) actually gives no actual baking time on this recipe. The baking times are based on my personal experience with this pie. It's very, very good.
Ingredients:
1/2 cup of butter
2 cups of sugar
2 small spoonfuls of cinnamon powder
8 eggs (separate yolks from whites)
4 cups of minced walnuts
3 cups of flour
2 tsp baking powder
for the syrup
1 1/2 cups sugar
1-2 small glasses of brandy
1/3 cup rusk crumbs (more or less to your taste)
Directions:
1. COMBINE THE BUTTER, THE SUGAR, THE CINNAMON AND THE EGG YOKES FOR 10 MINS.
2. THEN, WHISK THE WHITES INTO A MERINGUE AND MIX IT WITH THE BUTTER MIXTURE LITTLE BY LITTLE.
3. AFTER THAT, MIX THE MINCED WALNUTS WITH THE FLOUR AND THE BAKING POWDER AND ADD THEM ALL INTO THE MIXTURE OF THE BUTTER AND EGGS, LITTLE BY LITTLE, TOO, WORKING THE MIXTURE OUT CONTINUALLY UNTIL IT BECOMES SMOOTH AND EVEN.
4. THEN, EMPTY IT INTO A PROPER CAST IRON GRIDDLE (BUTTERED AND DREDGED WITH RUSK CRUMBS), DREDGE IT WITH THE REST MINCED WALNUTS AND BAKE IT AT 350 FOR ABOUT 30- 45 MINUTES.
5. MEANWHILE PREPARE THE SYRUP WITH 1 1/2 CUP OF SUGAR, 2 CUPS OF WATER AND 1-2 GLASSES OF BRANDY.
6. WHEN THE PIE IS READY, TAKE IT OUT OF THE OVEN AND SOAK IT IN THE HOT SYRUP.
