Yellowstone Potatoes Au Gratin

This is a recipe I invented on the fly whilst doing our annual Father's day outing in Yellowstone. Elected Camp Chef , I was tasked with providing a reasonable meal for 8 hungry dudes in the mountains, with only an hour to prepare. Read more ..... Yeah, I know, I should have gotten in the car earlier.... Oh, by the way, please remember that almost ALL of the ingredients are pre-prepared (ie: canned) and will suit any campsite. Try them in your home? Why not ??? Just don't let on to your guests !!! smirk !
Ingredients:
1 jar ragu garlic parmesan sauce
3 cans sliced new potatoes (you choose the brand....)
1/2 cup grated cheddar
1/2 cup grated mozzarella
1/4 cup parmesan or romano
optional: 1 small can diced green chilis, 1 tsp garlic powder
Directions:
1. Get a really cool can opener, like the XoXo ones....
2. Open all the cans.
3. Drain the potatoes, and put them in a 3 quart saucepan.
4. Put the pan on the stove, or your campstove if you're actually camping !
5. Stir in the Ragu sauce.
6. Heat slowly - yes, I said SLOWLY to a low boil.
7. Stir in the half the cheddar and mozzarella, and let them melt. If not cheesy enough, add more to your liking. Top with the Parmesan or Romano, and serve as the mood strikes....
8. Note: If not garlicky enough, add the 1 tsp. Also, adding the green chilis adds a rather unique accent. Experiment !!!
9. I actually had someone ASK for the recipe, and was somewhat embarrassed to tell them I just threw it together on the fly.
