Yellow Squash Patties

This is great for this time of year when a lot of us are over-run with squash out of the garden!
Ingredients:
8 yellow squash, grated
1 medium onion, finely diced
2 tablespoons salt
1 cup self-rising flour
1/2 cup cornmeal
1 egg
1 cup grated cheddar cheese (optional)
black pepper
2 -3 tablespoons oil (for frying)
Directions:
1. Place grated squash and onion in a colander over sink and sprinkle with salt. Let them drain over the sink until all moisture is gone. Add flour, cornmeal, pepper, egg and cheese. Mix well. Form into patties and fry in a little oil.
