Yellow Rice With Peas

Ingredients:
3 tablespoons vegetable oil
1 tablespoon achiote seeds
1/2 medium onion, minced
1 garlic clove, minced
2 cups long grain white rice
3 1/2 cups chicken broth
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup peas
Directions:
1. In a medium saucepan, heat oil over medium heat. Add achiote seeds and cook until seeds are sizzling and oil is a rich gold color.
2. Remove from heat. With a spoon, scoop up and discard seeds, leaving oil in pan.
3. Return pan to medium heat. Add onion and garlic and cook until softened, 2 minutes.
4. Add rice and cook, stirring, 1 minute or until grains look opaque.
5. Stir in chicken broth, salt and pepper. Bring to a boil, turn heat to low, cover pan and cook 18 mintues or until liquid is absorbed.
6. Cover and let rice stand 5 minutes. Gently stir in peas.
