I have made this many times. it's a wonderful salad made with yellow rice, water chestnuts, olives and artichokes. Serve warm or chilled It has a little crunch from the water chestnuts and color from the olive and scallions. Read more . One of my favorite pot luck salads Note: I brought it to a pot luck again this weekend, left with an empty bowl and several requests for the recipe. Those who love rice, had nothing quite like it!
Ingredients:
1, 10 3/4 oz pkg yellow saffron rice or similar
2 1/2 cups water or broth or as pkg suggests
2 small glass jars of marinated artickokes, drain and reserve liquid
1 can of water chestnuts drained
20 to 25 green red pimento stuffed olives coarse chopped
a few green onions sliced
1 tsp curry powder
1/2 cup mayonnaise
salt and pepper to taste
Directions:
1. Cook the yellow rice according to pkg ditrections
2. When done, cool to warm
3. meanwhile drain artickokes, chop and reserve juice
4. Chop scallions, and olives
5. Make a dressing from the drained artickoke liquid, mayonnaise and curry powder and blend smooth
6. Mix the rice with the artichokes, olives, water chestnuts and scallions
7. Mix in the mayo dressing to blend well
8. Serve as is or serve chilled
