This cake is very much like one I have enjoyed many times in the homes of my Latvian friends. I decided to experiment making the dough in my ABM and it turned out great so I am posting the instructions on how to make it that way.
Ingredients:
1/2 cup lukewarm water
1/2 cup milk (must be cold)
2 eggs
1/4 cup butter, melted
1/4 cup granulated sugar
3 cups all-purpose flour
1 tablespoon active dry yeast
3 apples, peeled and thinly sliced
3 tablespoons brown sugar, packed
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 pinch ground cloves
1/4 cup butter, melted
1/3 cup apple jelly, melted
Directions:
1. To make the cake dough, put all of the ingredients in the order listed in your bread machine and select the dough setting.
2. When the dough is ready, turn it out and press into a greased 9 x 13 cake pan.
3. Cover with a tea towel and let rise until doubled in bulk, about 1 hour.
4. When the dough has finished rising, top with the apple slices, overlapping to make sure the entire surface is covered.
5. Combine the sugar, cinnamon, nutmeg and cloves and sprinkle over the apples.
6. Drizzle with the melted butter.
7. Bake in a 375 degree F oven for 30 minutes.
8. Remove from the oven and brush the surface with the apple jelly.
9. Serve warm.
