Yankee Pot Roast

Rich, hearty and loaded with very flavorful broth.
Ingredients:
1 (5 -6 lb) chuck roast
1 lb carrot
6 -8 potatoes
2 medium onions
2 lbs whole fresh mushrooms
1/2 cup soy sauce
fresh corn (optional) or zucchini (optional) or squash (optional) or white pearl onion (optional)
Directions:
1. Preheat oven to 350 degrees.
2. Add Chuck Roast to large roasting pan and sprinkle with black pepper.
3. Add 1/2 cup water.
4. Pour small amount of soy sauce over the roast.
5. Cover and put in oven for 2 hours.
6. Quarter potatoes (with or without skin).
7. Clean mushrooms carefully, leave whole.
8. Quarter carrots length wise.
9. Dice Onions.
10. Add potatoes, onions, and carrots to pan and cover with the mushooms. Pour remaining soy sauce over everything.
11. Cook another hour and serve.
